Couple of weeks ago I collected rhubarb. My purpose was to make a sweet dessert soup. First I cooked a pieces of rhubarb in plain water. When picking up the stainless steel pot cover, soon water started to evaporate. It left these colorful patches on the pot lid.
Any ideas, what is root cause for these ? I quess the phenomena is based on interference. I believe there is something on the rhubarb, maybe sugars (?) that leaves thin film on pot cover. When I took the photo, I did not yet add sugar into water / rhubarb mixture...

Re: Kitchen optics
Hello Timo,
possibly this are crystals of oxalic acid. In rhubarb: ~ 0,5g/100g
Kind regards
Jörg
